For our Second Crop, we’ve altered the recipe to include more Port, specifically Ruby and Tawny. Production Director John Campbell explains that with the whisky now another year older, it can withstand the richness and intensity of these casks.
This year we’ve also swapped out Sherry casks for STR barriques to balance out the fruity, creamy flavours from the Port and add a delightful spice.
